what am i?
homemade pickled onions
ingredients:
2 1/2 red onions, peeled and thinly sliced
2 1/2c white vinegar
2 1/4c water
1/2c cane sugar
3T sea salt
2t rainbow whole peppercorns

recipe:
Thinly slice red onions with mandolin or knife. Be careful with that mando!
In medium-size pot, add vinegar, water, cane sugar and sea salt. Set to medium high and stir until sugar/salt are dissolved. After sugar/salt is dissolved, set aside and allow to cool for 10-15 minutes.
Add onions and peppercorns to jar. Slowly pour mixture from Step 2 into jar until onions are fully covered. Allow onions mixture to cool uncovered to room temperature. Once cooled, you can cover the jar and sit in fridge for 1 hour OR overnight for better results—the onions should have signature pinkish hue. Enjoy!
